The Chitarra was invented in the 1800s from Chieti, Italy to make long strings of pasta the old-fashioned way. Equipped with iron strings, these are each spaced equally on both sides but with different thickness and a slanted center that allows the various kinds of pasta to slide off easily.

I purchased this pasta chitarra for a fun and easy way to make both spaghetti and fettuccine. Upon arrival, the wood was scratchy and I had to sand down some pieces to avoid splinters in my fingers or my food. The little roller that arrived only partially works since one of the handles doesn’t turn. The wood quality definitely could be better, but it was strung nicely and evenly and came in a pretty bag. I ordered some mineral oil to help the dry wood. If I had to purchase again, I would probably have spent more and ordered one from Williams Sonoma.

Making fresh, authentic Italian pasta at home is simple with the Italian Pasta Chitarra. Start by preparing your pasta dough with flour and eggs. Once it's rolled out, place the dough sheet over the Chitarra's stainless steel wires. Using the included rolling pin, firmly press and roll the dough across the wires. As you press down, perfect strands of pasta will fall through the wires, ready to be collected from the open side.
Use the top side for thinner noodles and flip it over to the bottom side for wider noodles. It’s a time-honored method straight from Italy that brings the taste of tradition to your kitchen.
