The Chitarra was invented in the 1800s from Chieti, Italy to make long strings of pasta the old-fashioned way. Equipped with iron strings, these are each spaced equally on both sides but with different thickness and a slanted center that allows the various kinds of pasta to slide off easily.

Making fresh pasta with the Italian Pasta Chitarra is simple and authentic. First, roll out your pasta dough to your desired thickness. Place the sheet of dough over the wire strings of the Chitarra. Using the included rolling pin, press firmly and roll over the dough. The wires will cut the dough into perfect strands of pasta that fall through the open side.
For thin spaghetti, use one side of the Chitarra; for thicker noodles, flip it over and use the opposite side. Collect your freshly cut pasta, cook, and enjoy a true taste of Italy!
